Filet Mignon & Broccolini
*James prefers his meat to be on the really rare side, but since Alexa is cooking, she wants it well done. You can adjust the cooking time of this recipe to however you want your meat cooked.
3 medallions of filet mignon (approximately 1 ½ inch thick pieces)
½ TBSP butter
Coarse sea salt
Fresh ground black pepper to taste
1 TBSP olive oil
1 bunch fresh broccolini
*Broccolini is a fancy name for baby broccoli, if you can’t find it in markets, you can substitute with broccoli florets
1 whole lemon, juiced
Preheat the oven to 400°
Melt butter into a preheated cast iron skillet.
*Alexa’s chef trick: To check if your skillet is hot enough, sprinkle some water into the hot pan and it should sizzle.
Season one side of the filet mignon with salt and pepper and place into the hot skillet seasoned side down. While the filet is searing, season the other side of the medallions with salt and pepper.
After 2 minutes on one side, flip the medallions over and sear for another 2 minutes.
Place the skillet into the preheated oven and cook for 7 minutes for well done (adjust cooking time to your preference).
Halfway through the cooking process, squeeze ½ of the lemon juice over the filet.
Take the filet out of the oven, and let rest for 2-5 minutes so the juices are redistributed throughout the filet.
For the broccolini, cut the woody stems from the base of the broccolini (approximately 1- 1 ½” from the ends). Place butter and olive oil into a large skillet over medium heat and add the broccolini.
Season with salt and pepper, add ¼ cup of water to the pan and cook for approximately 10 minutes until al dente
Squeeze the remaining lemon juice over the broccolini at the end of the cooking time.
