Ron Jeremy's Veggie Omelet

Ingredients:

  • 3 eggs
  • ¼ cup diced red bell pepper
  • ¼ cup diced onions
  • ½ cup sliced white button mushrooms
  • ½ cup shredded cheddar cheese
  • ½ cup shredded Swiss cheese
  • 2 TBSP milk
  • 1 TBSP butter
  • Freshly ground black pepper to taste

Instructions:

  1. In a mixing bowl, add eggs, milk, pepper, and rum and beat together.
  2. In a small non-stick pan, melt butter and sauté onions, peppers and mushrooms for 3 minutes over medium heat, until soft.
  3. Pour the egg mixture into the pan, covering the ingredients entirely. Cover the pan and let cook on medium for 3-4 minutes.
  4. Remove the lid and add cheese to the omelet. Cover the pan again until cheese has melted.
  5. Using a spatula, fold the omelet in half and serve hot.
